It is so important to really get under the skin of what you want to achieve and to understand your values, personality, history of the business, the local area, your customers, together with potential new customers and of course the competition. 

Successful restaurants and cafés have a point of difference and an individual personality which has to be determined at the outset to obtain customer buy-in and drive loyalty.
